Ingredients:

250g peeled and deveined shrimp
2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon ground coriander seed
¼ teaspoon cayenne pepper (optional)
400ml coconut milk
2 tablespoons tomato paste
2 tablespoons ground peanuts
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the cumin, paprika, coriander seed, and cayenne pepper (if using) to the pan and cook for another minute.
Add the shrimp to the pan and cook until just pink on both sides, about 3 minutes.
Pour in the coconut milk and tomato paste and stir to combine. Bring to a simmer then reduce heat to low. Simmer for 10 minutes or until thickened slightly.
Stir in the ground peanuts then season with salt and pepper to taste. Simmer for another 5 minutes or until thickened further. Serve hot over cooked rice or quinoa if desired. Enjoy!
