Ingredients:

1/2 cup tapioca flour
1/4 cup coconut milk
2 eggs
2 tablespoons olive oil
Salt and pepper to taste

Cooking Instructions:

In a medium bowl, whisk together the tapioca flour, coconut milk, eggs, olive oil, salt and pepper until smooth.
Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.
Pour about 1/4 cup of the batter into the skillet and swirl it around to evenly coat the bottom of the pan.
Cook for about 2 minutes or until lightly golden brown on one side then flip and cook for an additional 1-2 minutes on the other side.
Remove from heat and repeat with remaining batter until all crepes are cooked.
Serve warm with your favorite toppings such as honey, jam or fresh fruit.
