Ingredients:

200g salted cod
1 red onion, finely chopped
2 tomatoes, diced
1/2 red pepper, diced
2 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon chopped parsley
Salt and pepper to taste

Cooking Instructions:

Soak the salted cod in cold water for at least 8 hours or overnight. Drain and flake into small pieces.
In a large bowl combine the flaked cod with the onion, tomatoes and red pepper.
In a separate bowl whisk together the olive oil, lemon juice, parsley and salt and pepper to taste. Pour over the salad ingredients in the large bowl and mix until everything is evenly coated with dressing.
Serve chilled or at room temperature as a side dish or light meal. Enjoy!
