Brazilian Moqueca for One

Ingredients:

1 tablespoon olive oil
1/2 onion, diced
1 garlic clove, minced
1/2 red bell pepper, diced
2 tablespoons tomato paste
2 tablespoons white wine vinegar
1/4 teaspoon cumin powder
1/4 teaspoon paprika powder
Salt and pepper to taste
150g white fish fillet (such as cod or haddock) cut into cubes
100g shrimp, peeled and deveined

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the bell pepper and cook for another 3 minutes. Stir in the tomato paste, white wine vinegar, cumin powder, paprika powder, salt and pepper. Cook for another 2 minutes.
Add the fish cubes and shrimp to the skillet and cook until the fish is cooked through and the shrimp are pink, about 8-10 minutes.
Serve hot with rice or crusty bread. Enjoy!
