Brazilian Feijoada for One

Ingredients:

1 tablespoon olive oil
2 cloves garlic (minced)
1/2 onion (diced)
1/2 red bell pepper (diced)
100g smoked sausage (sliced)
100g pork shoulder (cubed)
100g beef chuck (cubed)
2 tablespoons tomato paste
1 teaspoon smoked paprika
1 teaspoon cumin powder
2 cups cooked black beans
2 cups chicken broth

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the garlic and onion and cook until softened, about 5 minutes.
Add the bell pepper and cook for an additional 3 minutes.
Add the sausage, pork shoulder, and beef chuck to the pot and cook until lightly browned on all sides.
Stir in the tomato paste, smoked paprika, cumin powder, black beans, and chicken broth. Bring to a boil then reduce heat to low and simmer for 45 minutes or until the meat is tender.
