Ingredients:

200g uncooked white rice
1 onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
400ml chicken stock or vegetable stock
200g cooked shrimp, peeled and deveined
2 tablespoons chopped parsley
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 180°C.
Heat the olive oil in a large ovenproof skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the rice and stir to coat in the oil. Pour in the stock and bring to a boil. Reduce heat to low and simmer for 10 minutes.
Add the shrimp and parsley to the skillet and season with salt and pepper to taste. Stir to combine everything together.
Transfer the skillet to the preheated oven and bake for 15-20 minutes or until all of the liquid has been absorbed by the rice.
