Ingredients:

2 chicken breasts (400g)
2 tablespoons of olive oil (30ml)
2 tablespoons of BBQ sauce (30ml)
1 head of romaine lettuce (200g)
1 red bell pepper (100g)
1 yellow bell pepper (100g)
½ cup of corn kernels (80g)
½ cup of black beans (80g)
¼ cup of diced red onion (40g)

Cooking Instructions:

Preheat the oven to 375°F/190°C. Place the chicken breasts on a baking sheet lined with parchment paper and brush them with olive oil. Bake for 20 minutes or until cooked through. Once cooked, let cool before shredding into small pieces.
In a large bowl, combine the shredded chicken with the BBQ sauce and mix until evenly coated.
Add the lettuce, bell peppers, corn kernels, black beans and red onion to the bowl and mix until everything is evenly distributed.
Serve immediately or store in an airtight container in the refrigerator for up to 3 days. Enjoy!
