Ingredients:

2 tablespoons olive oil
1/2 cup diced sweet potatoes
1/4 cup diced ham
1/4 cup shredded cheese of your choice
1/4 cup diced bell peppers or other vegetables of your choice
2 eggs

Cooking Instructions:

Preheat oven to 375°F. Grease a baking sheet with the olive oil.
Spread the sweet potatoes on the baking sheet and bake for 15 minutes.
Add the ham, cheese and vegetables to the baking sheet and mix together with the sweet potatoes. Make two small wells in the mixture for the eggs.
Crack an egg into each well and bake for 10 minutes or until eggs are cooked to your desired doneness.
