Ingredients:

1 large sweet potato (200g)
2 tablespoons olive oil (30ml)
1/4 teaspoon garlic powder (1.25ml)
1/4 teaspoon onion powder (1.25ml)
Salt and pepper to taste (2g each)
2 tablespoons grated cheese (30ml)
1 large egg (50g)

Cooking Instructions:

Preheat oven to 375°F/190°C.
Peel the sweet potato and cut into thin slices about ¼ inch thick.
Place the slices on a baking sheet lined with parchment paper or aluminum foil.
Drizzle with olive oil and sprinkle with garlic powder, onion powder, salt, and pepper.
Bake for 15 minutes until the sweet potatoes are tender but not mushy.
Remove from oven and sprinkle with grated cheese over the top of the sweet potatoes slices in a single layer.
Crack an egg into the center of each slice of sweet potato and season with salt and pepper if desired.
Bake for an additional 10 minutes until egg is cooked through but still slightly runny in the center when pierced with a fork or knife tip .
Serve warm with your favorite toppings such as hot sauce or salsa if desired .
