Ingredients:

2 tablespoons olive oil
1/2 cup diced sweet potatoes
1/4 cup grated cheese (cheddar or mozzarella)
1 egg
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F.
Heat the olive oil in a skillet over medium heat. Add the sweet potatoes and cook for 5 minutes, stirring occasionally.
Grease a small baking dish with cooking spray or butter. Place the cooked sweet potatoes in the dish and spread them out evenly. Sprinkle the grated cheese over the top of the sweet potatoes.
