Ingredients:

2 medium potatoes, peeled and diced into small cubes
4 slices of ham, diced into small cubes
1 tablespoon olive oil
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
2 large eggs

Cooking Instructions:

Preheat oven to 375°F.
In a medium bowl, combine potatoes, ham cubes, olive oil, garlic powder, onion powder, salt and pepper. Mix until all ingredients are evenly distributed.
Grease an oven safe skillet with cooking spray or butter. Place potato mixture in the skillet and spread out evenly.
Bake for 15 minutes or until potatoes are tender and lightly browned.
Remove skillet from oven and make two wells in the potato mixture for the eggs to sit in. Crack one egg into each well and season with salt and pepper if desired.
Return skillet to oven and bake for an additional 10 minutes or until eggs are cooked through to your desired doneness.
