Ingredients:

2 medium potatoes (peeled and grated)
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheese (cheddar or mozzarella)
1 large egg

Cooking Instructions:

Preheat oven to 375°F.
In a bowl, combine grated potatoes with olive oil, salt and pepper. Mix until evenly combined.
Grease a baking sheet with cooking spray or butter. Spread the potato mixture onto the baking sheet in an even layer. Bake for 15 minutes until golden brown and crispy.
Remove from oven and sprinkle cheese over the top of the potatoes. Make a small indentation in the center of the potato mixture and crack an egg into it.
Return to oven and bake for an additional 10 minutes until egg is cooked through and cheese is melted and bubbly.
Serve warm with your favorite toppings such as sour cream or salsa!
