Ingredients:

2 medium potatoes, peeled and diced into small cubes
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon paprika
Salt and pepper to taste
1/4 cup shredded cheddar cheese
2 large eggs

Cooking Instructions:

Preheat oven to 375°F (190°C).
In a large bowl, combine the diced potatoes with the olive oil, garlic powder, onion powder, paprika, salt and pepper. Mix until all the ingredients are evenly distributed.
Spread the potato mixture onto a baking sheet lined with parchment paper. Bake for 20 minutes or until golden brown and crispy.
Remove from oven and sprinkle with cheddar cheese. Make two small wells in the potato mixture for the eggs. Crack an egg into each well and season with salt and pepper to taste.
Bake for an additional 5 minutes or until eggs are cooked to your desired doneness.
