Ingredients:

2 slices of bacon
1 egg
2 tablespoons of butter
1 tablespoon of olive oil
1/4 cup of shredded cheese (cheddar or mozzarella)
2 tablespoons of chopped fresh herbs (parsley, chives, or thyme)
Salt and pepper to taste

Cooking Instructions:

Heat a large skillet over medium heat. Add the bacon and cook until crispy, about 5 minutes. Remove from the skillet and set aside on a plate lined with paper towels.
In the same skillet, add the butter and olive oil. Once melted, crack the egg into the pan and season with salt and pepper. Cook until the egg white is set but the yolk is still runny, about 3 minutes.
Place one slice of bacon on a plate or cutting board. Top with the cooked egg, cheese, herbs, salt and pepper to taste. Place the other slice of bacon on top to form a sandwich-like roll. Serve immediately while hot!
