Ingredients:

2 tablespoons vegetable oil
1 tablespoon sesame oil
2 cloves garlic, minced
1 teaspoon fresh ginger, minced
1/2 teaspoon red pepper flakes (optional)
1/2 cup diced onion or shallots
1/2 cup diced bell pepper (any color)
2 boneless skinless chicken breasts, cut into cubes
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons hoisin sauce
1 tablespoon sugar
2 teaspoons cornstarch
1/4 cup roasted peanuts or cashews (optional)

Cooking Instructions:

Heat the vegetable and sesame oils in a large skillet over medium heat. Add the garlic, ginger and red pepper flakes and cook for 30 seconds.
Add the onion and bell pepper and cook for 3 minutes until softened.
Add the chicken cubes and cook for 5 minutes until cooked through.
In a small bowl, mix together the soy sauce, rice wine vinegar, hoisin sauce, sugar and cornstarch until combined. Pour over the chicken mixture in the skillet and stir to combine. Cook for an additional 3-5 minutes until sauce has thickened slightly.
Serve over steamed white rice or noodles with roasted peanuts or cashews if desired.
