Ingredients:

2 slices of whole wheat bread
2 tablespoons of olive oil
1/2 red pepper, roasted and sliced into strips
1/4 cup of halloumi cheese, sliced into thin strips
1 teaspoon of fresh oregano leaves, chopped
Salt and pepper to taste

Cooking Instructions:

Preheat a grill pan over medium-high heat.
Brush the slices of bread with olive oil on both sides. Place the slices on the preheated grill pan and cook for 2-3 minutes per side until lightly toasted.
Add the halloumi cheese strips to the grill pan and cook for 2-3 minutes per side until golden brown and crispy.
Remove the bread from the grill pan and place on a plate. Top each slice with roasted red pepper strips, halloumi cheese strips, oregano leaves, salt and pepper to taste.
Serve immediately while hot!
