Ingredients:

1/2 cup quinoa
1/2 red onion, sliced into wedges
1 cup mushrooms, sliced
2 tablespoons olive oil
2 tablespoons balsamic vinegar
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F.
Place the red onion wedges on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast in the oven for 15 minutes.
Add the mushrooms to the baking sheet and drizzle with remaining tablespoon of olive oil. Roast in the oven for 10 minutes or until mushrooms are golden brown.
Meanwhile, cook quinoa according to package instructions. Once cooked, transfer to a large bowl and set aside to cool slightly.
Once vegetables are done roasting, add them to the bowl of quinoa along with balsamic vinegar and mix until combined. Season with salt and pepper as desired.
Serve warm or cold as desired! Enjoy!
