Ingredients:

1 large eggplant, sliced into 1/2 inch thick slices
2 tablespoons olive oil
Salt and pepper to taste
2 slices of whole wheat bread or pita bread
4 ounces feta cheese, crumbled or sliced into thin strips
2 tablespoons fresh parsley, chopped (optional)

Cooking Instructions:

Preheat a grill or grill pan over medium heat.
Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
Grill the eggplant slices for about 5 minutes per side, until they are tender and lightly charred.
Toast the bread or pita on the grill for 1 minute per side.
Assemble the sandwich by layering the grilled eggplant slices on one slice of bread or pita, followed by feta cheese and parsley (if using). Top with remaining slice of bread or pita.
Serve immediately while still warm.
