Ingredients:

1 medium eggplant, sliced into 1/2 inch thick rounds
2 tablespoons olive oil
2 tablespoons fresh herbs (such as oregano or thyme), chopped
Salt and pepper to taste
2 slices of whole wheat bread or a whole wheat wrap
4 ounces of goat cheese, crumbled or sliced into thin pieces

Cooking Instructions:

Preheat the grill to medium heat.
Brush the eggplant slices with olive oil on both sides and season with salt and pepper.
Place the eggplant slices on the preheated grill and cook for 5 minutes per side until lightly charred and tender.
Toast the bread or wrap in a toaster oven or on the grill for a few minutes until lightly browned.
Spread the goat cheese onto one slice of toast/wrap and top with grilled eggplant slices. Sprinkle with fresh herbs if desired.
Top with remaining slice of toast/wrap and enjoy!
