Ingredients:

2 slices of sourdough bread
2 tablespoons of olive oil
1/2 cup of cherry tomatoes, halved
1/4 cup of feta cheese, crumbled
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 400°F (200°C). Place the cherry tomatoes on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Roast for 10 minutes until the tomatoes are soft and lightly browned.
Heat a large skillet over medium heat. Place the slices of sourdough bread in the skillet and cook for 2 minutes per side until lightly golden brown.
Remove the bread from the skillet and top one slice with roasted cherry tomatoes and feta cheese. Place the other slice on top to form a sandwich.
Return the sandwich to the skillet and cook for 3 minutes per side until golden brown and crispy on both sides. Serve warm.
