Ingredients:

2 slices of sourdough bread
2 tablespoons olive oil
1/2 cup diced eggplant
1/4 cup crumbled feta cheese
2 tablespoons butter, softened

Cooking Instructions:

Preheat the oven to 400°F. Place the diced eggplant on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast for 8-10 minutes until lightly browned. Set aside to cool.
Spread the softened butter onto one side of each slice of sourdough bread. Place the slices butter-side down onto a preheated skillet over medium heat.
Layer the roasted eggplant and feta cheese onto one slice of bread in the skillet, then top with the other slice of bread (butter-side up). Cook for 3-4 minutes until golden brown and crispy on both sides.
Serve warm and enjoy!
