Ingredients:

1 cup of uncooked white rice
2 tablespoons of vegetable oil
1 onion, diced
2 cloves of garlic, minced
1 teaspoon of grated ginger root
1 tablespoon of curry powder
1 teaspoon of garam masala powder
½ teaspoon of turmeric powder
½ teaspoon of cumin powder
½ teaspoon of ground black pepper
2 tablespoons of tomato paste
2 cups of vegetable broth or water
Salt to taste
¼ cup frozen peas (optional)
¼ cup diced carrots (optional)

Cooking Instructions:

Begin by cooking the rice according to package instructions. Once cooked, set aside.
Heat the oil in a large pot over medium heat. Add the onion and cook until softened and lightly browned, about 5 minutes. Add the garlic and ginger and cook for an additional minute.
Add the curry powder, garam masala powder, turmeric powder, cumin powder and black pepper to the pot and stir to combine. Cook for another minute or two until fragrant.
Add the tomato paste and stir to combine with the spices. Cook for an additional minute or two until fragrant.
Pour in the vegetable broth or water and bring to a boil over high heat. Reduce heat to low and simmer for 15 minutes or until sauce has thickened slightly. Taste and adjust seasoning with salt if needed.
Add the cooked rice to the pot along with frozen peas and diced carrots (if using). Stir everything together until combined then cover with a lid and simmer for an additional 10 minutes or until vegetables are cooked through and sauce has thickened further if desired.
Serve hot with your favorite toppings such as chopped scallions or shredded cheese if desired! Enjoy!
