Ingredients:

2 fillets of white fish (cod or haddock)
1 cup of flour
1 egg, beaten
2 tablespoons of vegetable oil
1 onion, diced
1 carrot, diced
2 cloves of garlic, minced
2 tablespoons of soy sauce
2 tablespoons of mirin

Cooking Instructions:

In a shallow bowl or plate, combine the flour and beaten egg. Mix until combined.
Heat the vegetable oil in a large skillet over medium heat. Dip each fillet into the egg mixture and then place into the skillet. Fry for 3-4 minutes per side until golden brown and cooked through. Remove from heat and set aside on a plate lined with paper towels to absorb any excess oil.
In the same skillet, add the onion, carrot and garlic and sauté for 3-4 minutes until softened. Add in the soy sauce and mirin and cook for an additional minute until fragrant.
Place the fried fish back into the skillet with the vegetables and cook for an additional minute until everything is heated through. Serve immediately while hot!
