Ingredients:

1/2 cup of all
purpose flour
1 teaspoon of baking powder
1/4 teaspoon of salt
2 tablespoons of olive oil
3/4 cup of warm water
1 large potato, peeled and diced into small cubes
2 cloves of garlic, minced
1 tablespoon of olive oil
1/4 teaspoon of dried oregano
1/4 teaspoon of dried basil
1/4 teaspoon of dried thyme
3 tablespoons of grated Parmesan cheese

Cooking Instructions:

Preheat the oven to 425°F (220°C).
In a medium bowl, mix together the flour, baking powder, salt and 2 tablespoons olive oil until combined. Slowly add in the warm water while stirring until a dough forms. Knead the dough for about 5 minutes until it is smooth and elastic. Cover the bowl with a damp cloth and let it rest for 10 minutes.
Meanwhile, heat 1 tablespoon olive oil in a skillet over medium heat. Add in the diced potatoes and cook for about 5 minutes until they are lightly browned on all sides. Add in the minced garlic and cook for another minute until fragrant. Remove from heat and set aside.
On a lightly floured surface, roll out the pizza dough into an 8 inch circle or oval shape (depending on your preference). Place onto a greased baking sheet or pizza stone.
Spread the cooked potatoes over the pizza dough evenly leaving about 1 inch around the edges uncovered. Sprinkle with oregano, basil, thyme and Parmesan cheese over top evenly.
Bake in preheated oven for 20 to 25 minutes until golden brown on top and bottom is crispy when tapped lightly with your finger tips or fork tines . 7 .Remove from oven and let cool slightly before slicing into wedges to serve . Enjoy!
