Ingredients:

250g cooked shrimp, peeled and deveined
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes
Salt and pepper to taste
1/4 cup white wine or chicken broth
2 tablespoons butter, melted
1/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley leaves
1 sheet of store bought pizza dough or homemade pizza dough

Cooking Instructions:

Preheat oven to 375°F (190°C). Grease a baking sheet with cooking spray.
Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 30 seconds. Add shrimp and season with oregano, red pepper flakes, salt and pepper. Cook until shrimp are just cooked through, about 3 minutes. Add white wine or chicken broth and cook until liquid is reduced by half, about 3 minutes more. Remove from heat and set aside.
On a lightly floured surface roll out the pizza dough into a 12×12 inch rectangle. Spread the melted butter over the dough then sprinkle with Parmesan cheese followed by mozzarella cheese and parsley leaves. Top with the cooked shrimp mixture then roll up the dough like a jelly roll starting from one of the long sides of the rectangle. Place on prepared baking sheet seam side down then brush top with remaining butter if desired.
Bake in preheated oven for 25 minutes or until golden brown on top. Let cool for 5 minutes before slicing into pieces to serve warm. Enjoy!
