Ingredients:

1 eggplant, sliced into thin rounds
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons tomato sauce or pizza sauce
1/2 cup shredded mozzarella cheese
2 tablespoons grated Parmesan cheese

Cooking Instructions:

Preheat oven to 375°F (190°C).
Place the eggplant slices on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with garlic powder, oregano, salt and pepper. Bake for 15 minutes until the eggplant is tender.
Spread the tomato sauce over the eggplant slices and top with mozzarella cheese and Parmesan cheese. Bake for an additional 5 minutes until the cheese is melted and bubbly.
