Ingredients:

2 tablespoons olive oil
1 boneless skinless chicken breast, pounded to ½ inch thickness
Salt and pepper to taste
2 tablespoons butter
1 clove garlic, minced
½ cup canned artichoke hearts, drained and chopped
2 slices provolone cheese
1 ciabatta roll, split in half lengthwise

Cooking Instructions:

Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper. Add the chicken to the skillet and cook for 4-5 minutes per side or until cooked through. Remove from heat and set aside.
In the same skillet, melt the butter over medium heat. Add the garlic and cook for 1 minute or until fragrant. Add the artichoke hearts and cook for 3-4 minutes or until heated through.
Place the chicken on one half of the ciabatta roll. Top with artichoke hearts and provolone cheese slices. Place the other half of the ciabatta roll on top of the sandwich filling.
Heat a large skillet over medium heat and place the sandwich in it. Cook for 3-4 minutes per side or until golden brown and cheese is melted. Serve warm.
