Ingredients:

2 slices of white bread
2 tablespoons of olive oil
1 large tomato, sliced into thin rounds
4 slices of mozzarella cheese
Salt and pepper to taste

Cooking Instructions:

Heat a large skillet over medium heat. Add the olive oil and swirl it around the pan.
Place the two slices of bread in the skillet and toast for about 2 minutes on each side until golden brown.
Remove the bread from the skillet and place on a plate. Top each slice with two slices of mozzarella cheese.
Place the tomato slices on top of the cheese and season with salt and pepper to taste.
Place the other slice of bread on top of the tomatoes and press down lightly to help them stick together.
Return the sandwich to the skillet over medium heat for about 5 minutes until cheese is melted and tomatoes are softened slightly.
