Ingredients:

150g beef stewing steak, cubed
1/2 onion, diced
2 cloves garlic, minced
2 carrots, diced
1/2 cup mushrooms, sliced
1/2 cup red wine
1/4 cup beef stock
2 tablespoons tomato paste
2 teaspoons fresh thyme leaves
1 bay leaf
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 350°F (175°C).
In a large oven-safe pot or Dutch oven over medium heat, add the cubed beef and cook until browned on all sides. Remove from the pot and set aside.
Add the onion and garlic to the pot and cook until softened. Add the carrots and mushrooms and cook for an additional 5 minutes.
Return the beef to the pot along with the red wine, beef stock, tomato paste, thyme leaves and bay leaf. Stir to combine then season with salt and pepper to taste.
Cover the pot with a lid or foil then transfer to preheated oven for 1 hour 15 minutes or until beef is tender.
Serve hot with your favorite side dishes such as mashed potatoes or steamed vegetables. Enjoy!
