Ingredients:

2 eggs
120ml milk
60ml vegetable oil
1 teaspoon sugar
½ teaspoon salt
200g gluten free flour blend (rice flour, potato starch, tapioca starch)
2 teaspoons active dry yeast

Cooking Instructions:

In a bowl whisk together the eggs, milk, vegetable oil, sugar and salt until combined.
In a separate bowl mix together the gluten free flour blend and active dry yeast.
Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
Knead the dough for 5 minutes until it is smooth and elastic.
Place the dough in an oiled bowl and cover with plastic wrap or a damp cloth for 10 minutes to allow it to rise slightly.
Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan with butter or oil spray.
Place the dough in the prepared pan and spread evenly with your hands or a rolling pin if necessary. Bake for 25 minutes or until golden brown on top and cooked through when tested with a toothpick inserted into center of brioche loaf comes out cleanly without any wet dough sticking to it .
Allow brioche loaf to cool before slicing and serving warm or at room temperature with butter or jam if desired .
