Ingredients:

500g lean minced beef
2 large potatoes, peeled and diced into small cubes
1 onion, finely chopped
2 cloves of garlic, minced
1 tablespoon of tomato paste
1 teaspoon of dried oregano
1 teaspoon of dried thyme leaves
½ teaspoon of ground black pepper
2 tablespoons of olive oil
½ cup of beef stock or water
Salt to taste

Cooking Instructions:

Preheat the oven to 200°C/400°F.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the minced beef and cook until browned, about 8 minutes. Stir in the tomato paste, oregano, thyme leaves and black pepper. Cook for another minute or two until fragrant.
Add the potatoes to the skillet and stir to combine with the beef mixture. Pour in the beef stock or water and season with salt to taste. Simmer for 10 minutes or until most of the liquid has been absorbed by the potatoes.
Transfer the mixture into a 9 inch pie dish or ovenproof skillet and spread it out evenly with a spoon or spatula. Bake in preheated oven for 25 minutes or until golden brown on top. Serve hot with your favorite sides!
