Ingredients:

500g lean ground beef
1 large sweet potato, peeled and diced into small cubes
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme leaves
2 tablespoons tomato paste
1/2 cup beef stock or broth
2 tablespoons Worcestershire sauce
Salt and pepper to taste
2 sheets of puff pastry

Cooking Instructions:

Preheat oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until browned. Add the onion and garlic and cook for an additional 3 minutes. Add the thyme leaves, tomato paste, beef stock or broth, Worcestershire sauce, salt and pepper. Simmer for 10 minutes until the mixture has thickened slightly. Remove from heat.
In a medium bowl combine the cooked beef mixture with the diced sweet potato cubes. Mix until combined then transfer to a 9 inch pie dish or baking dish.
Cut two sheets of puff pastry into circles that are slightly larger than the pie dish or baking dish you are using. Place one sheet of pastry on top of the filling in the pie dish or baking dish then crimp around the edges to seal it in place. Cut several slits in the top of the pastry so steam can escape while cooking then brush with egg wash if desired for a golden finish when cooked. Place in preheated oven for 30 minutes or until golden brown on top and bubbling around edges. Let cool before serving for best results!
