Ingredients:

100g lean beef mince
1 parsnip, peeled and diced into small cubes
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon dried thyme leaves
½ teaspoon ground black pepper
½ teaspoon sea salt flakes
2 tablespoons tomato paste
½ cup beef stock
2 tablespoons olive oil

Cooking Instructions:

Preheat the oven to 180°C/350°F.
Heat the olive oil in a large ovenproof skillet over medium heat. Add the onion and garlic and cook for 3-4 minutes until softened.
Add the beef mince to the skillet and cook for 5 minutes until browned.
Add the parsnip cubes, thyme leaves, black pepper, sea salt flakes and tomato paste to the skillet and stir to combine. Cook for a further 3 minutes until fragrant.
Pour in the beef stock and bring to a simmer before transferring the skillet to the preheated oven. Bake for 30-35 minutes until the parsnips are tender and cooked through. Serve hot with your favorite sides!
