Ingredients:

150g lean ground beef
1 small onion, diced
1 garlic clove, minced
1/2 teaspoon dried thyme leaves
1/4 teaspoon black pepper
2 medium potatoes, peeled and diced into small cubes
2 tablespoons tomato paste
1/2 cup vegetable stock
2 tablespoons plain flour

Cooking Instructions:

Preheat oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until browned. Add the onion and garlic and cook for an additional 3 minutes. Stir in the thyme and pepper.
Add the potatoes to the skillet and stir to combine. Cook for an additional 5 minutes or until potatoes are tender.
Add the tomato paste, vegetable stock, and flour to the skillet and stir until combined. Simmer for 5 minutes or until sauce has thickened slightly.
Transfer mixture to an oven-safe dish or pie plate and spread evenly over the bottom of the dish. Top with a pastry crust if desired (or use a store bought pre-made crust). Bake in preheated oven for 25 minutes or until crust is golden brown and filling is bubbly.
