Ingredients:

500g lean beef mince
2 large leeks, sliced into thin rounds
2 cloves garlic, minced
1 teaspoon dried thyme leaves
1 teaspoon smoked paprika powder
1 tablespoon tomato paste
2 cups vegetable stock or water
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the beef mince and cook until browned. Break up any large chunks with a wooden spoon.
Add the leeks and garlic to the pot and cook for 3-4 minutes until softened.
Add the thyme, paprika powder, tomato paste, vegetable stock or water, salt and pepper to the pot. Stir everything together until combined.
Bring the stew to a boil then reduce heat to low and simmer for 30-35 minutes until the beef is cooked through and tender. Stir occasionally throughout cooking time.
Serve hot with your favorite sides such as mashed potatoes or steamed vegetables! Enjoy!
