Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
250g beef mince
2 leeks, sliced into thin rounds
2 tablespoons tomato paste
500ml beef stock
1 teaspoon dried thyme

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook for 3-4 minutes until softened.
Add the beef mince and cook for 5 minutes until browned.
Add the leeks and cook for a further 3 minutes until softened.
Stir in the tomato paste and cook for 1 minute before adding the beef stock and thyme. Bring to a simmer then reduce heat to low and simmer for 30 minutes until thickened.
Serve with mashed potatoes or crusty bread. Enjoy!
