Ingredients:

200g lean beef, thinly sliced
1 bunch of asparagus spears, trimmed and cut into 2 inch pieces
2 cloves garlic, minced
1 teaspoon fresh ginger, grated or minced
2 tablespoons low sodium soy sauce or tamari sauce
1 tablespoon rice vinegar or apple cider vinegar
1 teaspoon sesame oil (optional)
2 tablespoons water

Cooking Instructions:

Heat a large non-stick skillet over medium-high heat. Add the beef and cook for 3-4 minutes until lightly browned. Remove from the pan and set aside.
Add the asparagus to the pan and cook for 3-4 minutes until lightly browned. Add the garlic and ginger and cook for an additional minute until fragrant.
Return the beef to the pan along with the soy sauce or tamari sauce, rice vinegar or apple cider vinegar, sesame oil (if using), and water. Stir to combine all ingredients together. Cook for an additional 5 minutes until everything is heated through and cooked to your desired doneness.
Serve immediately with your favorite side dish such as steamed rice or quinoa. Enjoy!
