Ingredients:

200g lean beef strips
1 small squash, cut into cubes
2 cloves garlic, minced
1 red bell pepper, sliced into strips
2 tablespoons soy sauce or tamari sauce (gluten
free)
1 teaspoon ground ginger powder
2 tablespoons water or vegetable broth

Cooking Instructions:

Heat a large non-stick skillet over medium heat. Add the beef strips and cook for 3-4 minutes until lightly browned. Remove from the pan and set aside.
Add the squash cubes to the same skillet and cook for 3-4 minutes until lightly browned. Add the garlic and bell pepper slices to the pan and cook for another 2 minutes until softened.
Return the beef strips to the pan along with the soy sauce or tamari sauce, ground ginger powder, and water or vegetable broth. Stir everything together to combine and cook for another 5 minutes until everything is cooked through.
