Ingredients:

200g lean beef strips
1 red bell pepper, sliced into thin strips
1 green bell pepper, sliced into thin strips
1 onion, sliced into thin strips
2 cloves garlic, minced
2 tablespoons low sodium soy sauce
2 tablespoons rice vinegar

Cooking Instructions:

Heat a large non-stick skillet over medium heat. Add the beef strips and cook for 3-4 minutes until lightly browned. Remove from the pan and set aside.
Add the bell peppers, onion and garlic to the pan and cook for 3-4 minutes until softened.
Return the beef to the pan along with the soy sauce and rice vinegar. Cook for an additional 3-4 minutes until everything is cooked through.
Serve hot with your favorite side dish or over cooked rice or noodles. Enjoy!
