Ingredients:

200g beef mince
1 onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon ground coriander
2 cups vegetable broth or stock
1 can (400g) diced tomatoes with juice
½ cup red lentils, rinsed and drained
2 carrots, peeled and diced
2 celery stalks, diced
¼ cup fresh parsley leaves, chopped

Cooking Instructions:

In a large pot over medium heat add the beef mince and cook until browned. Break up any large chunks with a wooden spoon. Add the onion and garlic to the pot and cook for 3-4 minutes until softened. Add the cumin, smoked paprika and coriander to the pot and stir to combine. Cook for another minute until fragrant.
Pour in the vegetable broth or stock along with the diced tomatoes with juice. Bring to a boil then reduce heat to low-medium heat so that it’s simmering gently. Add in the red lentils followed by the carrots and celery stalks. Simmer for 30 minutes or until lentils are tender stirring occasionally.
Once cooked stir through fresh parsley leaves before serving hot with crusty bread or over cooked rice if desired. Enjoy!
