This oil-free Beef and Sweet Potato Stew is an easy one-serving meal that’s packed with flavor and nutrition! It’s made with lean beef mince, sweet potato cubes, onion, bell pepper, garlic spices and tomato paste simmered in beef stock or broth for 20 minutes until tender then seasoned with salt & pepper before serving hot!

Ingredients:

150g lean beef mince
1 small sweet potato (150g), peeled and diced into cubes
1/2 onion (50g), diced
1/2 red bell pepper (50g), diced
2 cloves garlic (10g), minced
1/2 teaspoon ground cumin (2.5ml)
1/4 teaspoon smoked paprika (1.25ml)
1/4 teaspoon dried oregano (1.25ml)
2 tablespoons tomato paste (30ml)
2 cups beef stock or broth (500ml)
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the beef mince and cook until browned, about 5 minutes. Break up the mince with a wooden spoon as it cooks.
Add the sweet potato, onion, bell pepper, garlic, cumin, smoked paprika, oregano and tomato paste to the pot and stir to combine. Cook for 3 minutes until vegetables are softened slightly.
Pour in the beef stock or broth and bring to a boil then reduce heat to low and simmer for 20 minutes until sweet potatoes are tender.
Season with salt and pepper to taste then serve hot with your favorite sides or toppings such as sour cream or cheese if desired!
