Ingredients:

200g lean beef mince
1 onion, diced
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
2 cups vegetable broth
1 cup pearl barley
2 tablespoons tomato paste
1 teaspoon dried oregano
½ teaspoon dried thyme
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat, cook the beef mince until browned. Drain off any excess fat.
Add the onion, garlic, carrot and celery to the pot and cook for 5 minutes until softened.
Pour in the vegetable broth and add the pearl barley. Stir in the tomato paste and herbs. Season with salt and pepper to taste.
Bring to a boil then reduce heat to low and simmer for 30 minutes or until the barley is cooked through. 5
