Ingredients:

500g ground beef
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste
1 teaspoon dried oregano leaves
½ teaspoon salt
¼ teaspoon black pepper
½ cup breadcrumbs
2 eggs, lightly beaten
100g cheddar cheese, grated

Cooking Instructions:

Preheat your smoker to 225°F.
In a large bowl, combine the ground beef, onion, garlic, Worcestershire sauce, tomato paste, oregano leaves, salt and pepper. Mix until all ingredients are evenly distributed.
Add the breadcrumbs and eggs to the mixture and mix until everything is combined.
Divide the mixture into two equal parts and shape each part into a loaf shape on a baking sheet lined with parchment paper or aluminum foil.
Place half of the grated cheese on top of one of the loaves and then place the other loaf on top of it so that it forms a pocket for the cheese inside the meatloaf. Securely seal all edges together so that no cheese can escape during cooking.
Place the meatloaf in your smoker and cook for 1 hour 30 minutes or until an internal temperature of 165°F is reached when tested with a thermometer inserted into the center of the meatloaf.
Remove from smoker and let rest for 10 minutes before slicing and serving warm with your favorite sides or condiments!
