Ingredients:

150g lean beef mince
1/2 cup pearl barley
1/2 onion, diced
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
2 cups beef stock or broth
2 tablespoons tomato paste
1 teaspoon dried thyme
Salt and pepper to taste

Cooking Instructions:

Heat a large pot over medium heat. Add the beef mince and cook until browned. Remove from the pot and set aside.
Add the onion, garlic, carrot and celery to the pot and cook until softened.
Add the pearl barley to the pot along with the beef stock or broth, tomato paste and thyme. Bring to a boil then reduce heat to low and simmer for 30 minutes or until the barley is tender.
Return the cooked beef mince to the pot along with salt and pepper to taste. Simmer for an additional 10 minutes or until heated through.
