Ingredients:

250g lean ground beef
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon ground black pepper
2 cups cooked brown rice or quinoa
2 cups fresh spinach leaves, chopped
1 cup low
sodium beef broth or stock
½ cup grated Parmesan cheese

Cooking Instructions:

Preheat oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef until browned. Add the onion and garlic and cook for an additional 5 minutes.
Add the oregano, basil, black pepper, cooked rice or quinoa, spinach leaves and beef broth or stock to the skillet and stir until combined.
Transfer the mixture to a 9×13 inch baking dish and top with Parmesan cheese. Bake in preheated oven for 30 minutes or until heated through.
Serve hot with your favorite side dishes. Enjoy!
