Ingredients:

200g lean ground beef
1 small onion, diced
2 cloves garlic, minced
1 large zucchini, diced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon ground black pepper
1/4 teaspoon salt
2 tablespoons tomato paste
1 cup vegetable broth

Cooking Instructions:

Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish with non-stick cooking spray.
Heat a large skillet over medium heat. Add the ground beef and cook until browned. Drain off any excess fat.
Add the onion and garlic to the skillet and cook for 3 minutes until softened.
Add the zucchini, oregano, basil, pepper and salt to the skillet and cook for an additional 3 minutes until the vegetables are tender.
Stir in the tomato paste and vegetable broth until combined. Simmer for 5 minutes until most of the liquid has been absorbed by the beef mixture.
Transfer the beef mixture to the prepared baking dish and spread evenly in an even layer. Bake for 20 minutes or until golden brown on top.
