Ingredients:

1 cup gluten free all
purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons butter or margarine, melted and cooled slightly
3/4 cup buttermilk or plain yogurt
1/4 cup honey
1 large egg
3/4 cup raisins

Cooking Instructions:

Preheat oven to 350°F. Grease a 9×5 inch loaf pan with butter or margarine.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
In a separate bowl, whisk together the melted butter or margarine, buttermilk or yogurt, honey and egg until combined.
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix!
Fold in the raisins until evenly distributed throughout the batter.
Pour batter into prepared loaf pan and bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
Let cool in pan for 10 minutes before transferring to a wire rack to cool completely before slicing and serving. Enjoy!
