Ingredients:

120g lean ground beef
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrots
2 cloves garlic, minced
2 cups low sodium beef broth or stock
1/4 teaspoon dried thyme leaves
1/4 teaspoon ground black pepper
2 cups shredded cabbage

Cooking Instructions:

In a large pot over medium heat, cook the ground beef until browned. Drain off any excess fat.
Add the onion, celery, carrots and garlic to the pot and cook for 3 minutes until softened.
Pour in the beef broth or stock and add the thyme leaves and black pepper. Bring to a boil then reduce heat to low and simmer for 20 minutes.
Add the shredded cabbage to the pot and simmer for an additional 10 minutes until vegetables are tender.
Serve hot with your favorite sides or toppings such as sour cream or cheese if desired. Enjoy!
