Ingredients:

1 butternut squash (peeled and cubed)
2 tablespoons olive oil
1 onion (diced)
2 cloves garlic (minced)
2 cups vegetable broth
1 teaspoon smoked paprika
1 teaspoon ground cumin
½ teaspoon ground nutmeg
¼ cup maple syrup

Cooking Instructions:

Preheat your smoker to 225°F.
Place the cubed butternut squash on a baking sheet and drizzle with olive oil. Place in the smoker and cook for 20 minutes or until tender.
In a large pot over medium heat, add the onion and garlic and cook until softened, about 5 minutes.
Add the cooked butternut squash, vegetable broth, smoked paprika, cumin, nutmeg and maple syrup to the pot and bring to a boil. Reduce heat to low and simmer for 10 minutes or until all of the flavors have blended together.
Using an immersion blender or food processor, blend the soup until smooth. Serve warm with additional maple syrup if desired.
