Ingredients:

2 cups of smoked corn kernels
1/2 cup of diced bacon
1/4 cup of diced onion
2 cloves of garlic, minced
1 teaspoon of fresh thyme leaves, chopped
2 tablespoons of butter
2 cups of vegetable broth or stock
1/2 cup of heavy cream or half and half
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat, melt the butter. Add the bacon and onion and cook until the bacon is crispy.
Add the garlic and thyme leaves and cook for another minute.
Add the smoked corn kernels and vegetable broth or stock to the pot. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Add the heavy cream or half and half to the pot and stir until combined. Simmer for an additional 10 minutes or until thickened.
